Your Questions About Healthy Breakfast

Charles asks…

What can I have for a healthy breakfast?

I’m on a healthy eating plan (I refuse to call it a diet!) I’m ok with my evening meal but can anyone give me some ideas for breakfast and lunch? I want a breakfast that is obviously healthy and will fill me up. I’m bored of eating rice cakes for lunch. I’m willing to go shopping so all ideas welcome.

Granola cereal with fruit is one of my faves…

I use Quakers http://www.blogcdn.com/www.thatsfit.com/media/2009/01/quaker-100-natural-granola-with-oats,-honey,-and-raisens-amazoncom.jpg except i use almond instead of raisin, use 1% milk, and add any fruit that you like…

Omelets with only egg whites and use vegetables such as spinach with fat free feta http://static-resources.goodguide.com/images/entities/all/226780.jpg is really good.

Turkey bacon is a healthy bacon substitute and taste just as great and in my opinion better than regular bacon. I usually use oscar meyer http://images.plumgoodfood.com/images/Kristin/aphotos/pantry/031308/lg/10245.jpg , dont forget to put a spoonful of salsa in ur omelete for seasoning ;p

Sharon asks…

How do I make muffins a healthy breakfast?

Muffins are my favorite thing for breakfast, but I am also watching what I eat (manly because my family is). I was wondering if anybody had a muffin recipe that is low in calorie’s and are healthy. I want to surprise my family with making breakfast for them for all the hard work they have done losing weight.

PS. Oh and the recipe should be easy enough for a 16 year old teen boy to make.

thanks and god bless.

answers:

These are **really** good. I always make a batch and stash them in the freezer! Theyre whole grain and healthy but have fruits, nuts, and juice in them to make them really flavorful. You should also know that its very forgiving; if you don’t have one of the ingredients, you can leave it out.Every other “healthy” muffin i have tried always has the consistency of an old sponge..

Morning Glory Muffins

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup ground flax seed
3/4 cup sugar
2 3/4 teaspoons baking powder
2 teaspoons ground cinnamon
3/4 teaspoon salt
1/4 teaspoon baking soda
4 egg whites
1 egg
1/2 cup unsweetened applesauce
1/3 cup orange juice
1/4 cup canola oil
2 teaspoons vanilla extract
2 cups grated carrots
1/2 cup chopped pecans
1/2 cup flaked coconut
1/2 cup raisins
1 medium tart apple, peeled and grated

In a large bowl, combine the first eight ingredients. In another bowl, beat the egg whites, egg, applesauce, orange juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the carrots, pecans, coconut, raisins and apple.
Coat muffin cups with nonstick cooking spray or use foil liners; fill three-fourths full. Bake at 350 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
